520 _aThis operational manual is one of eight manuals aimed at providing structured guidelines to ensuring the safety of fish and fishery products for human consumption, in terms of best practices and official controls. It provides guidance for the inspection and official control of the food safety conditions of fishery products produced within the Caribbean region. This manual therefore focuses only on food safety aspects in the official control of fishery products. It concentrates exclusively on the hazards to human health which may arise in fishery products, and the organisation of a system of official controls, consisting of legislation, and an inspection and enforcement system), which can be used to minimise the probability of injury to health.

Il procure les directives pratiques pour l’inspection et les contrôles officiels des conditions sanitaires des produits de la pêche, issus de la région des Caraïbes. Ce manuel se concentre donc uniquement sur les aspects de sécurité sanitaire dans le contrôle officiel des produits de la pêche. Il se concentre exclusivement sur les risques pour la santé humaine qui pourraient survenir dans les produits de la pêche, et l'organisation d'un système de contrôle officiel ; celui-ci, constitué de la législation, de l’inspection et de l’exécution, peut être utilisé pour réduire au minimum la probabilité d'atteinte à la santé.
520 _aDit is een van acht handleidingen over de veiligheid van voor menselijke consumptie bestemde vis en visserijproducten. De handleidingen zijn gericht op een structurele aanpak van beste werkwijzen en officiële controles om de veiligheid van vis en visserijproducten voor menselijke consumptie te waarborgen. Dit document bevat aanwijzingen voor de inspectie en officiële controle van voedselveiligheidsomstandigheden bij visserijproducten die worden geproduceerd in het Caribische gebied. Deze handleiding richt zich daarom alleen op voedselveiligheidsaspecten bij de officiële controle van visserijproducten, waarbij specifiek wordt gekeken naar gevaren voor de menselijke gezondheid die kunnen optreden in visserijproducten. Verder wordt de organisatie besproken van een systeem voor officiële controles (bestaande uit wetgeving en een inspectie- en handhavingssysteem), dat kan worden gebruikt om het risico op ziekte en letsel zo klein mogelijk te maken.
